Soak the stone in water for several minutes. Once soaked, lay the stone flat on a cloth or on a piece of rubber to prevent it from slipping when sharpening the knife. To sharpen the blade, keep a 20 – degree angle between the blade and the stone, slide the edge, using a slight amount of pressure. If you sharpen your knives regularly, five passes will be enough. Then turn the knife over, and repeat the process.
